Recipe of the Week: Sweet Skills in the kitchen with Espresso Energy Bites
Like we mentioned, when we introduced Sylvie Allen’s Sweet Skills instagram feed to the blog, that we’ll be sharing recipes from the coach/trainer/athlete/gardener/celiac/fitness legend’s blog, to inspire a few new energy snacks for your repertoire.
Here’s the first.
If any seem a bit too high-energy, then just remember Sylvie’s mantra for all things: “The more you ride, the more you can eat!”
From Sylvie: I love to eat! I have been Celiac for 8 years and like to surprise my friends with the amazing treats I make that are gluten free. I haven’t purchased an energy bar in years! Why would you after you try some of these recipes… they’re so easy to make and deeeelicious (oh and you’ll save mega bucks too). Pretty nice to be able to know exactly what’s in every bite… yum!
The formula is simple:
- Make a batch of Espresso Energy Bites
- Cut in travel size pieces
- Wrap individually and store in a ziplock bag in freezer
- Open freezer and take your snack for the day
- Option to share with friends.
These yummy balls will give you a boost of caffeine for your ride!
1 c large flake oats
1/2 c ground flaxseed
2 Tbs fresh ground UN-brewed coffee or espresso beans
1/2 c creamy almond or peanut butter
1/4 c honey
1 tsp vanilla
1/4 c chocolate or carob chips
1/4 c dried cranberries or goji berries
Stir oats, flaxseed, and coffee granules together, then add your almond or peanut butter, honey, and vanilla. Once well combined fold in your chocolate chips and cranberries. Stir well, you might have to use your hands! If it’s too dry then add a Tbs of melted coconut oil.
Roll into about 12 balls of whatever size you would like. Store in the fridge for 1 week or wrap and put in the freezer.
