Recipe of the Week: Lentil Soup

Earlier this month at the Winds of Change Wellness Gathering, Matt Prescott of Snowline Catering ran a workshop on preparing affordable healthy food.

He demonstrated the preparation of Lentil Soup, and has shared the recipe here, so you can try it at home for yourself… (If you do, send us a pic, or a review of how tasty it was!)

Lentil Soup

  • 1 diced onion
  • 2 cloves crushed garlic
  • 2 grated carrots
  • 1 can diced tomatoes
  • Dry lentils
  • Curry powder
  • Chopped cilantro
  • Sliced green onion

Cooked Rice

Slowly brown onions in a little oil in a heavy pot.
Add garlic and cook for a minute.
Add curry powder to taste and toast for a minute.
Add grated carrots and cook till softening.
Add tomatoes and lentils.
Add water to cover the lentils.
Cook till lentils are tender.
Adjust liquid if necessary.
Add cilantro and green onions.
Adjust seasoning.
Serve over rice.
