5 amazing things about chives:
- they’re the smallest species of edible onions (allium schoenoprasum)
- they’re the only species of onion native to Europe, Asia, Africa and the Americas
- in the garden, they repel insects and serve as good pest control
- bees love them
- they’re rich in vitamins A and C, and are beneficial to the circulatory system.
Another endearing attribute (apart from the fact that even a black-thumb like me can grow them successfully) are their pretty purple blossoms – a welcome splash of colour in the early garden.
Here are a few great uses for Chive Bounty:
- Chop them up and freeze them in a baggie for winter
- Add them to eggs (scrambled eggs, egg salad, quiche or frittatas)
- Sprinkle them on salads and soups.
- Sour cream and chives on a baked potato.
- Make chive butter (cream together 1/2 cup softened butter, I small clove garlic and 1 tbsp chopped chives) to spread on warm biscuits or bread.
